Brief Summary
|
The study aims to compare the nutritional composition and secondary metabolite content of Sorghum bicolor (L.) Moench in its immature form (ponk) and mature form (jowar). The samples will be sourced from identified agro-climatic regions of India where sorghum is widely cultivated. Laboratory-based assessments will be carried out to analyse parameters such as proximate composition, phenolic content, and dietary fiber. The study also includes development of traditional food products using both forms followed by sensory evaluation to assess acceptability. |
